You've tasted the Mango Habanero Margarita. You've had the Hennessy Lemonade. You've probably gone back for the Passion Fruit Mojito at least twice. But you might not know the person behind all of it.
Our head mixologist — we'll call him Marcus because that's his name — came to Fuego with a decade of bar experience across Tampa and Miami. He joined the team in our third month and immediately started rebuilding the cocktail program from scratch.
His Philosophy
"A great cocktail at a hookah lounge has to do two things: taste exceptional on its own, and complement whatever the guest is smoking. You're competing with complex flavors. You have to earn the attention."
His Process
Every new cocktail goes through a minimum of 15 iterations before it hits the menu. He tests with different shisha pairings. He watches guests' faces when they try it. He adjusts until the reaction is right.
His Current Obsession
"Smoke-infused spirits. We're about to do something with smoked rum and tropical fruit that I think is going to become the Fuego signature."
